Ever since our move back to DC last year, one of the activities we look forward to most every month is Book Club. With a great group of girlfriends, we all get together to eat, drink and chat about our latest book selection. This past book club meeting, talented DC photographer and close friend Abby Jiu served the most amazing soup we’ve had in a long time! Adapted from this recipe she found on Food Network, we asked Abby to share her delicious treat with our readers. As we all cozy up at home for even more cold winter weather, this is the perfect thing to cook up at home…enjoy!
What You’ll Need:
- 2 (14.5 ounce) cans of white beans
- 1 T olive oil
- 2 cans of diced green chiles
- 1 large onion, chopped
- 1 shallot, chopped
- 1 red bell pepper, chopped
- 4 garlic clove, minced
- 1 T of ground cumin (or more to taste)
- 2 T of ground coriander (or more to taste)
- 4 cups of chicken broth
- 1 lime juiced, plus lime wedges for serving
- 1 chicken cooked and shredded/1 rotisserie chicken, skin removed
- 1 bottle of beer (I prefer Corona)
- 1/4 cup chopped cilantro
- 2 cans of shoepeg corn
- 1 avocado, for topping
- shredded cheese, for topping
Cook and shred chicken. In a large pot, add olive oil and heat over medium-high heat. Add garlic, onion, shallot and bell pepper and saute until soft, about 5 minutes. Season the vegetables with salt and pepper to taste, add cumin, coriander and chopped green chiles and half of the beer. Continue to saute for 1 more minute. Stir in chicken stock and lime juice and the remainder of beer, bring to a simmer. Drain and rinse been, and then add them to the soup and continue to simmer for 20 minutes.After 20 minutes of simmering, taste for seasoning and adjust if necessary. Stir in chicken. Service the chili in individual bowls topped with cheese, tortilla chips, big spoonful of corn and lime wedges. Also great with a pice of cornbread.
